Note: A 3/4 cup serving of Ravioli Casserole provides the equivalent of a two-ounce serving of cooked meat/meat alternate for the Child Nutrition Meal Pattern requirement.

Ingredients:

  • 4 #10 cans Bernard >Bite Size= Mini Beef Ravioli in Tomato & Meat Sauce
  • Eight (8) pounds of Ground Beef*
  • Two (2) tablespoons of salt
  • Five (5) pounds of Shredded Cheese*

*For school and other government establishments, these can be government commodity items.

Directions for Preparation:

  1. Brown the ground beef; then season with the salt.  Drain off excess fat.
  2. Use four (4) 12" x 20" x 2" pans.  Place one-half of a #10 can of Mini-Ravioli in the bottom of each of the four pans.
  3. Take the browned ground beef and divide it into four equal parts.  Spread one part over the Mini-Ravioli in each pan.
  4. Next divide the cheese into four equal parts.  Take half of each part and spread it over the browned ground beef.
  5. Spread the remaining one-half cans of Mini-Ravioli on top of the cheese.
  6. Top each of the pans with the remaining four half-parts of the cheese.
  7. Bake at 375EF for approximately thirty (30) minutes until the cheese is melted and the Beef Ravioli Casserole is bubbling.
