Note: A 3/4 cup serving of Ravioli Casserole provides the equivalent of a two-ounce serving of cooked meat/meat alternate for the Child Nutrition Meal Pattern requirement.
Ingredients:
- 4 #10 cans Bernard >Bite Size= Mini Beef Ravioli in Tomato & Meat Sauce
- Eight (8) pounds of Ground Beef*
- Two (2) tablespoons of salt
- Five (5) pounds of Shredded Cheese*
*For school and other government establishments, these can be government commodity items.
Directions for Preparation:
- Brown the ground beef; then season with the salt. Drain off excess fat.
- Use four (4) 12" x 20" x 2" pans. Place one-half of a #10 can of Mini-Ravioli in the bottom of each of the four pans.
- Take the browned ground beef and divide it into four equal parts. Spread one part over the Mini-Ravioli in each pan.
- Next divide the cheese into four equal parts. Take half of each part and spread it over the browned ground beef.
- Spread the remaining one-half cans of Mini-Ravioli on top of the cheese.
- Top each of the pans with the remaining four half-parts of the cheese.
- Bake at 375EF for approximately thirty (30) minutes until the cheese is melted and the Beef Ravioli Casserole is bubbling.
