Jerk is a style of cooking native to Jamaica and the Caribbean, in which Chicken, Beef and Fish are dry-rubbed with a mixture of native spices.  Our spice mixture includes allspice, Scotch bonnet peppers, cloves, cinnamon, garlic and thyme.
