Directions
Stove Top or Steam Kettle Directions:

Prepare Meat:
- Brown 5 lbs. raw ground meat and drain excess fat.
- OR Use 3.75 lb. precooked beef crumbles or shredded poultry. Rinse and drain precooked beef.

Combine Ingredients:
- In a large pot or steam kettle, combine the cooked meat, 2 lb. tomato paste, and one gallon of hot water. Mix thoroughly.
- Add contents of this can and blend until uniform.
- Cook: Bring to a boil, reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
- Rest & Finish: Let stand 5-10 minutes before serving. Top with 2½ lbs. shredded cheese (either individually or mixed into the mac and cheese).
Oven Cook Directions:

Prepare Meat:
- Brown 5 lbs. raw ground meat and drain excess fat.
- OR Rinse and drain 3.75 lb. precooked beef crumbles or use shredded poultry.

Prep Pan:
- In a 12" x 20" x 5 ½" steam table pan, combine the cooked meat, 2 lb. tomato paste, and one gallon hot water. Mix thoroughly.
- Add contents of this can and blend until uniform.
- Bake: Cover tightly with foil and bake in a preheated 425°F oven for 35 minutes.
- Finish: Remove from oven, stir well. Top with 2½ lbs. shredded cheese. Bake for an additional 10 minutes. Let stand 5-10 minutes before serving.
Yield:
50 (6 oz.) servings providing 2 oz. Meat/Meat Alternate, ½ Grain ounce equivalent, and ¼ cup red vegetable.
Notes:
- Government-donated meat can be used.
- Precooked beef is calculated at a 75% ratio to raw beef and must be rinsed and drained before use.
